Mhairi Mitchell finds out about co-owner Luis Lopez Morton’s journey from childhood dreams and UK inspirations to creating a unique whisky haven

Luis Lopez Morton’s journey into the culinary world began with a childhood dream and was later fuelled by his experiences abroad. “Since I was a young boy, I always wanted to have a restaurant, because I love to cook and eat – from Mexican street food to Michelin-star restaurants and everything in between,” he says.
His passion took a definitive shape after completing an MBA in Manchester. The culture, vibe and charm of the country left a lasting impression on him, compelling him to realise his dream upon returning to Mexico. Thus, One Pound Terraza was born.
Luis’s love for whisky, meanwhile, was ignited during a family trip to Edinburgh at the age of 18. “I was lucky enough to visit Glenkinchie distillery and was immediately hooked,” he recalls. This initial spark grew into a deep appreciation and enthusiasm for whisky, which now plays a central role at One Pound Terraza.
The bar is a visual homage to British culture, designed meticulously by Luis and his wife Inés. The decor features original artworks by both renowned and emerging UK artists and quirky auction finds, including a London Underground sign and a drawing of a Harrods delivery van by a young King Charles III. The two-level restaurant is bathed in natural light, with the first-floor housing a wine cellar and dining area, perfect for SMWS tastings. The second level has a terrace with a leafy view of the neighbourhood and a well-stocked bar.
Luis takes pride in the bar’s extensive whisky collection, featuring around 78 different bottles.
“From day one, we wanted to showcase the wide variety of spirits from the UK, especially whisky and gin,” he explains. A dedicated ’whisky corner’ on the left side of the bar prominently displays SMWS bottlings. The bar also offers 16 signature cocktails prepared table-side on a repurposed British Airways trolley. Given its location in Mexico City, the bar also features a diverse selection of tequila, mezcal and rum.

Currently, One Pound Terraza offers eight different SMWS bottlings, with plans to introduce another eight due to their growing popularity. Being an SMWS partner bar is a significant honour for Luis. “We are very proud of what we do here at One Pound, and this partnership will undoubtedly bring new experiences and happy memories to our customers,” he says. The bar hosts monthly SMWS events and regularly introduces new bottles to its patrons.
The response to SMWS bottlings has been overwhelmingly positive. “The word is ‘thrilled’,” Luis says.
“Guests appreciate the unique experience of single-cask bottles, which serve as fantastic conversation starters and offer a new and exciting way to enjoy whisky.”
Luis observes that while traditional blended Scotch whisky remains a staple, his partnership with the SMWS has introduced a fresh dynamic to the local whisky scene. “Being partners with the SMWS has been a game changer,” he says. “New customers are already coming in specifically asking for Society drams, indicating a growing interest and appreciation for unique whisky experiences.”
Luis aims to create long-lasting memories for One Pound Terraza’s patrons through excellent food, exceptional service, and unique experiences. “Being an SMWS partner bar gives us that edge over our competition,” he says. The bar’s ability to recommend whiskies based on individual flavour preferences and budgets ensures a personalised and memorable experience for every guest.
