Nestled within the historic walls of Maria Loretto Castle on the edge of Austria’s Wörthersee lake, Onyx stands as a beacon for whisky enthusiasts, offering an unparalleled experience in taste, ambience and history. Founded through a serendipitous journey ignited by a shared passion for whisky, Onyx has become a haven for connoisseurs and novices alike, curating an extensive collection of over 240 distinct whiskies.
“It all started through our mutual friend Wolfgang Smetanig, who invited me to an SMWS ‘whisky cruise’ about two years ago,” reminisces Adi Kulterer, the owner of Onyx. “I was absolutely fascinated by whisky.”
Embracing the ethos of aqua vitae, the water of life, Onyx emerged as a testament to Adi’s ardour for exploration and refinement. “Whisky made the bar here at Loretto complete and has opened a very wide spectrum,” he reflects, highlighting the pivotal role whisky has played in shaping the bar’s identity.
For Onyx, whisky isn’t merely a libation; it’s a narrative woven through time, evoking memories of childhood and familial bonds. “My father lived in Canada and has always liked to drink whisky,” he says. “Since I have worked in gastronomy from a very early age, it has shaped how I access different things and the way I enjoy them.”
The bar’s allure extends beyond its spirited offerings to its meticulous design and layout, reminiscent of a bygone era. “The bar is in a house that dates back to 1652, and this space used to be accommodation for the house staff. We then designed it to evoke a castle-like ambience,” he explains.

Central to Onyx’s charm is its extensive whisky collection, curated to cater to every palate. From peaty delights to delicate expressions, each whisky tells a story, inviting patrons on a sensory journey of discovery. “We have at least six bottles from each flavour profile in the bar and also 200 more bottles in the cellar,” he reveals.
“To be part of a huge family that is present all over the globe is an extremely exciting thing,” he says, emphasising the collaborative spirit that defines the partnership. As an esteemed partner of the SMWS, Onyx epitomises excellence in whisky curation and presentation.

“Johnny and Irena at Onyx are excellent, they love the topic of whisky, which means they are perfect for presenting something that they support,” he affirms.
As whisky continues to enjoy a renaissance, Onyx remains at the forefront of the movement, offering a sanctuary for discerning palates and curious minds alike. “It’s a product that mirrors the customer. An understanding and having a mature palate,” Adi muses. “It’s something that is for enjoyment.”
